Pappaw Ivey's Banana Cake

Welcome to my blog! I plan to share recipes that are my faves. Some are new and some, like this one, are family hierlooms. I have always gone to the kitchen when I feel homesick because it makes me feel close to the ones I love. My fondest memories with my Mammaw and Pappaw Ivey, and especially my Mom, are the times we shared in the kitchen. I guess it proves that we southerners look to food for much more than just nourishment! Please feel free to share your own family favorites!

Pappaw Ivey's Banana Cake
2C sifted flour
3/4t baking powder
1/2C shortening
1/4C buttermilk
2 eggs, beaten
1/2t baking soda
1/2t salt
1C mashed bananas
1t vanilla
Cream shortening and sugar. Mix buttermilk with mashed bananas and add to the sugar mixture alternately with sifted dry ingredients. Add eggs and vanilla. Mix well. Bake in 3 8-inch pans that are greased and floured. Bake at 350 degrees until cake springs back when touched in the middle.
Banana Frosting
1/2C mashed bananas
1/2t lemon juice
1/4C butter, room temp
1 lb confectioner's sugar
Cream butter with 1C sugar. Mix lemon juice with bananas and add to mixture. Add the rest of the sugar. Frost on completely cooled cake.
